One of our "new year's resolutions" has been to plan our meals out so we can better plan our shopping trips. We are trying to do one big shopping day in Pueblo (Sam's club for better prices) and just supplement a couple times a month for fresh produce & such. We got of to a rocky start, mostly because we haven't been home to use the menu :-) but I think I'll get the hang of it.
Anyway, we forgot to get a main ingredient for our planned meal on Monday, so I had to pinch-hit, and came up with this recipe. Hope you enjoy it as much as we did! :-)
Cheeseburger rice:
1lb ground beef
2 cups cooked rice (your favorite variety- cook according to package directions)
1 can tomato sauce
2 tbsp yellow mustard
1/4 cup + 1/2 cup ketchup
1 cup shredded cheddar cheese
1/4 to 1/2 cup crumbled bacon (I used the Hormel packaged bacon crumbles- they are pre-cooked- if you use fresh just cook it first and then crumble it on top)
Preheat oven to 350 degrees. Brown hamburger in skillet, drain. Combine tomato sauce, mustard & 1/4 cup ketchup. Mix rice, hamburger and tomato sauce mixture together. Put in oven-proof casserole dish, cover with remaining 1/2 cup ketchup. Top with shredded cheese and crumbled bacon. Bake in oven for 20-30 minutes until cheese is melted and bacon is crisp.
